Celebrate the Feast Day of St. Honore With This Cake Recipe!

Let us honor the patron saint of bakers with this cake recipe dedicated just for him!

It is known to most that our beloved Pope Francis loves his share of baked goods. In fact, two of his favorite food are focaccia— a crusty Italian bread— and pizza, which is an Italian staple.

During his visit to the Philippines in 2015, Chef Jessie Sincioco made sure that Holy Pontiff would get to eat his favorite baked items— she served Lolo Kiko focaccia bread for breakfast, alongside a plate of his favorite meats and a bowl of seedless fruits@

But did you know that the bakers of some of the popes’s favorite dessert also have a patron saint of their own? St. Honore or St. Honoratus of Amiens is the patron saint of bakers, confectioners, flour merchants, and pastry chefs, among others, which means he definitely is the one who guides and protects the people who provide us with our cakes, cookies, and breads! St. Honore Cake Recipe

The St. Honore Cake, known in French as gateau St. Honore, is a pastry invented in 1847 at the Chiboust Bakery in Rue Saint-Honore in Paris. It is a set of puff pastries formed into a circle, and is surrounded by pate a choux (choux pastry)— a delicate pastry used in many baked goods.

Profiteroles dipped in caramelized sugar are placed on top of the circle side by side. These are topped with whipped cream in a traditional Saint Honore piping tip. It looks so good that we couldn’t help but look for a recipe to share with you! (Read: DIY Baking Substitutes for Basic Ingredients)

These are the ingredients you need:

For the Puff Pastry

  • 1 sheet of puff pastry

For the Pate a Choux

  • 1/4 cup unsalted butter
  • 1/2 cup water
  • 1/2 tsp granulated sugar
  • 1/4 tsp salt
  • 1/2 cup all-purpose flour
  • 2 eggs

For the pastry cream

  • 1 cup milk
  • 1/4 tsp vanilla bean paste, or 1/2 tsp vanilla extract
  • 1/3 cup granulated sugar
  • 2 tbsp cornstarch
  • 2 tbsp all-purpose flour
  • 1 egg
  • 1 egg yolk

For the whipped cream

  • 1/2 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/4 tsp vanilla extract

For the Salted Caramel

  • 2/3 cup granulated sugar
  • 1/3 cup heavy cream
  • 1/2 tsp salt, or more to taste
