3 Easy-To-Bake Desserts for Father’s Day

Make Father's Day extra meaningful with these desserts for papa, dad, lolo, or grandpa!

Father’s Day is just around the corner and we all want to make it a special day for dad, papa, lolo, or grandpa. However, because of the COVID-19 pandemic, it may not be the best idea to go out and eat at a restaurant, as it increases the risks of contracting the disease. But still, the quarantine restrictions do not necessarily mean that we can’t celebrate meaningfully on June 21!

Make this year’s Father’s Day special by gathering loved ones and ordering food from your dad’s favorite restaurant. And what’s a celebration without dessert? Lemon Pound Cake Muffins

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs, room temperature
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1/2 tsp lemon extract
  • 1-3/4 cups all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda

For the glaze:

  • 2 cups confectioners’ sugar
  • 3 tablespoons lemon juice

Baking Procedure:

  • In a large bowl, combine butter and sugar. Mix for 5-7 minutes or until fluffy.
  • Add the eggs one at a time and mix well for every addition.
  • Pour the sour cream and extracts and mix. Lastly, add the flour, salt, and baking soda. Mix well.
  • Grease a cupcake pan and fill with batter until 3/4 full. Bake at 400˚ for 18-20 minutes or until a toothpick inserted comes out clean.
  • Let the muffins cool on a wire rack 5 minutes after taking it out of the oven.
  • Combine all glaze ingredients and drizzle over cooled Lemon Pound Cake Muffins.

Rich Chocolate Chip Coffee Cake

  • 1 cup butter, softened
  • 1 package (8 ounces) cream cheese, softened
  • 1-1/2 cups sugar, divided
  • 2 eggs, room temperature
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup milk
  • 1 cup semisweet chocolate chips
  • 1/4 cup chopped pecans
  • 1 tsp ground cinnamon

Baking Procedure:

  • Mix the butter, cream cheese, and 1 1/4 cups sugar for 5-7 minutes or until light and fluffy. Add in the eggs and vanilla extract.
  • Combine the flour, baking soda, baking powder, and salt. Add to the butter mixture alternately with the milk. Lastly, add the chocolate chips.
  • Pour into a greased 9-inch pan and sprinkle the pecan-sugar-cinnamon mixture on top.
  • Bake at 350˚ for 30 minutes, then cover the pan and bake for an additional 30-40 minutes or until a toothpick inserted comes out clean.
  • Cool the Chocolate Chip Coffee Cake for 15 minutes or so before serving.

Chocolate Banana Bundles

  • 2 tbsps butter
  • 1/4 cup packed brown sugar
  • 2 medium ripe bananas, halved lengthwise
  • 1 sheet frozen puff pastry, thawed
  • 4 ounces semisweet chocolate, melted
  • Vanilla ice cream, optional

Baking Procedure:

  • Preheat oven to 400˚. In a large cast-iron pan or skillet, melt the butter over medium heat. Add the sugar and mix well until it dissolves.
  • Add the bananas until all are well-coated. Set aside to cool.
  • Cut the puff pastry into 4 rectangles. Place a half banana on to each rectangle. Fold the rectangle to cover the banana and pinch the edges to seal.
  • Place them in a lined baking sheet. Bake for 20-25 minutes or until golden brown.
  • Drizzle melted chocolate on top and add a scoop of vanilla ice cream if desired.
