Yes, you read that right. You can literally create a complete course with avocado as an ingredient for each meal. But some have yet to discover the versatility of this fruit, so we’re giving you recipes to start the journey to loving avocado and eating healthier!

Appetizer: Avocado Soup

  • 3 avocados, cut into chunks
  • 3 cups chicken or vegetable broth
  • 3 tablespoons fresh lemon or lime juice
  • 1/3 cup fresh cilantro leaves
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper

Entree: Avocado Salad

  • 1 medium cucumber, cut into quarters through the length then sliced
  • 16 oz. grape tomatoes
  • 1/2 small red onion, sliced into small pieces
  • 2 medium ripe avocados, sliced into bite size pieces

For dressing:

  • 1 1/2 tbsp fresh lemon juice
  • 1 1/2 tbsp red wine vinegar
  • 3 1/2 tbsp extra virgin olive oil
  • 1 tsp honey
  • 1 1/2 tsp minced garlic
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped parsley
  • 1/2 tsp dried oregano
  • Salt
  • Ground black pepper

Main: Avocado Pasta

  • 8 ounces dry pasta
  • 1 medium tomato, diced
  • 1 green onion, finely sliced
  • 1 large ripe avocado
  • 1/4 teaspoon finely grated garlic
  • Lemon juice (1/4 lemon)
  • Salt and fresh ground pepper, to taste

Dessert: Avocado Chocolate Mousse

  • 4 ounces semisweet chocolate, chopped (or chocolate chips–at least 60% dark, about 1/2 cup plus 2 tbsps)
  • 2 large ripe avocados
  • 3 tablespoons  unsweetened cocoa powder
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon salt
  • 1–3 teaspoons light agave nectar or maple syrup (optional)
  • Fresh raspberries, sliced strawberries, whipped cream, chocolate shavings (optional for serving)
